Mochi (Coconut)


2 c mochiko
3/4 c brown sugar
3/4 c white sugar
1/4 tsp salt
1 tbs baking powder
2 eggs
1/4 c melted butter
1 2/3 c evaporated milk
1 c shredded coconut (angel flakes)
1/3 c macademia nuts (chopped fine)

1. In a large mixing bowl, mix all dry ingredients.

2. Melt butter and cool.

3. In another mixing bowl, beat eggs and evaporated milk.

4. Combine all dry ingredients and butter and blend. Add macademia nuts and coconut. Pour into 9 x 13 ungreased pan and bake at 350 degrees F for about 45 minutes. When done, let cool and cut into 1-inch bars.
